Domestic vareniki are always very tasty and satisfying. There are many recipes for cooking this dish. They are prepared with different fillings and in different ways. Some landladies like to boil, some – to cook for a couple, but this is already a matter of taste. I want to share a recipe for vareniki with raspberries, dough for which I mixed on kefir. She boiled them in a saucepan.
Since now is not a berry season, I used frozen raspberries, which were previously thawed at room temperature, and the juice drained off. From the juice, by the way, you can make a wonderful kissel or compote. Tasty, plump dumplings were produced, which perfectly kept the shape and were not torn during cooking. Serve vareniki with berry stuffing is better in hot form, immediately after cooking. I recommend to try.

Prepare the dough.
In a bowl, pour in kefir at room temperature. Drive in the egg and add a pinch of salt.
Fork or whisk beat the mass until smooth.
Pour the sifted flour into pieces and knead the dough.
It should turn out to be soft, complaisant, not sticking to the hands. Cover the dough with a towel and leave for 10 minutes to “rest”.
The rest of the dough is rolled into a layer 5-6 mm thick. Using a glass or a ring, cut out the same circles of the desired size. The larger the circle, the more varenik.
In the middle of each circle lay a few berries of raspberries. Such vareniki can be prepared from fresh berries or from frozen berries. If you have frozen raspberries, it must be thawed at room temperature and drained of excess juice. From the juice often compote or jelly.
Top with raspberries sprinkled with a small amount of sugar. I added 1/3 of a teaspoon to each varenik.
It is good to fasten the edges of each circle, forming vareniki. So use all the dough and stuffing.
In a saucepan pour the water and bring to a boil, add a little water and send her dumplings. Gently mix so that they do not stick to the bottom of the pan, and cook for about 5 minutes from the time of ascent.
After cooking vareniki take out of the water with a noise or a strainer. Put into a bowl and grease with butter. If you dumplings seem not very sweet, sprinkle them on top with sugar.
Tasty, appetizing dumplings with raspberries are ready. Serve hot on the table.
