Cooking process
Any cookie is an excellent snack, and it is better not to think of tea or coffee.
I suggest you bake delicious, melting in your mouth cookies with boiled condensed milk. I did it the way you saw it on the main photo, you are free to do it any: you can just cut out a dough with a glass or any shape, grease with condensed milk and “glue” 2 halves.
As for the sprinkling, there are also many options: you can sprinkle with ground nuts – walnuts, hazelnuts, almonds, etc.
Butter should be obtained in advance from the refrigerator. It should be softened.
Please note: condensed milk and coconut chips indicate the amount that I needed!
So, to prepare a shortbread cookie with boiled condensed milk, we will prepare the products on the list.
Mix the powdered sugar, vanillin, almond flour. Add softened butter and egg yolks. We mix everything well.
To the resulting mass, gradually pour in the flour and knead the dough. I draw your attention that flour may need more or less than the specified amount.
This is the dough that should be output. It’s very soft!
We spread the dough on the parchment and roll it through the film. That is, put the film (plastic bag) on the dough and roll it out. Do not neglect this advice, otherwise the dough will “drag on” behind the rolling pin. The thickness of the dough is of the order of 5-6 mm.
We cut figurines out of the dough. We gather the scraps and roll them again, cut them again …
We put the blanks on parchment and bake in a preheated to 170 degree oven for 15-17 minutes, no more. The cookie will remain the same, it will become slightly gold.
We cool the blanks on the grate. After it has cooled down, we proceed to assembly. It was convenient for me to put condensed milk into a cornetic and extrude it from the biscuit. So, on one part of the cookie we put boiled condensed milk, cover with the second part, lightly pressing. Especially do not zealous, the cookie is very gentle, and strives to break. The sides of the cookie will also be smeared with condensed milk and roll in coconut shavings.
