We twist the edges of the film so that the meat is well compressed and all the air is released. Twist the edges of the sausage well.
Cut off the excess film from the ends.
I usually for the sake of confidence that the film does not burst and the integrity of the roll is not broken, I wrap the resulting roll with several layers of film.
In a large-diameter pan, pour water. We put our roll into the pan with water. We cook the roll for 1.5 hours.
We remove the finished roll from the water and let it cool down at room temperature first, and then we send it to the refrigerator for 5-6 hours. Only after that we remove the tape from the roll and cut it in portions.
