Bulgur with pumpkin is a simple, useful and tasty dish that can be cooked for 30-40 minutes and served as a side dish or a light, lean, vegetarian lunch or dinner. Cooked with the addition of colorful pumpkin, onions and a small amount of garlic, bulgur is crumbly, aromatic, juicy and very appetizing both in appearance and taste. To prepare, you will need the ingredients listed in the list.
Heat the vegetable oil over medium heat. Add the chopped onion and, stirring, fry for 5 minutes, until soft and slightly golden in color.
Then add the pumpkin peeled and sliced into small pieces. Stir the mixture for 2 more minutes.
Add the finely chopped cloves of garlic and fry it for 1 more minute until the garlic reveals its fragrance.
Add bulgur to the pan. Thoroughly mix everything, so that the oil is encased in all the grains of bulgur.
Add in the frying pan dried herbs, 2-3 pinch of salt, a little ground black pepper and bay leaf.
Pour in water or vegetable broth and bring the mixture to a boil.
When the water boils, cover the frying pan with a lid and soak the mixture on low heat for 15-17 minutes, until the liquid is almost completely absorbed and the bulgur does not become soft.
After turning off the fire, try the dish and add some salt and black pepper if necessary to taste. Then sprinkle bulgur 2-3 with a pinch of finely chopped parsley, cover the frying pan with a lid and allow the dish to brew for 5-10 minutes before serving to the table.
