Pear – 1 piece.
Rukkola – 100 g
Carrots – 1 pc.
Orange – 1 pc.
Almond – 10 g
Balsamico – to taste

This salad with arugula and pear is best suited for strict fasting days, for which dryness is prescribed, since it consists only of ingredients that have not been heat treated, and does not require refueling with oil. Actually, even balsamic use is not necessary, because our main refueling is orange juice. Here it is – it is necessary, and technologically (to protect from a darkening on air a pear), and to taste.
In a salad with arugula and pear, solid and not so sweet pears are better suited. Well, in my opinion. Sweet too contrast to taste with arugula. Instead of almonds, you can take any other nuts. Absolutely without nuts – boring. In addition, they give a little extra calories, that in the strict days of fasting – not the last thing!
Squeeze the juice from the orange directly into a bowl or plate, where you can pickle the pear.
We clean the pear and cut it into slices.
We sow a pear in orange juice, as time allows. If possible, we mix it several times.
We clean and cut with straw carrots.
Collect the salad: the bottom layer is arugula, and on top of it are scattered pears, carrots and almond petals.
You can still pour balsamic water.
But you can do without balsamic, well, that’s not the point in this recipe!
