Liver liverworts are an excellent option for a snack, an excellent addition to sandwiches, they perfectly match any garnish: mashed potatoes, rice, buckwheat, any porridge. I think that this is a win-win version of a delicious and hearty feast. They are prepared very quickly, but the taste is simply stunning: the liverworts are tender, soft, literally melt in the mouth.
Prepare the necessary ingredients.
The liver should be washed, stripped from the film, and must necessarily cut the bile ducts. Cut into small pieces.
Grind the liver with a meat grinder with a fine sieve (or use a blender).
Just grind the peeled onions with garlic.
Sprinkle salt, soda, black ground pepper, Provencal herbs. Add eggs and immediately pour in kefir. Instead of kefir, you can add cream or milk.
Mix the hepatic mass thoroughly. Pour cornstarch. It can be safely replaced with potato.
Again, mix thoroughly. All starch should completely disperse, in the test there should be no lumps.
Preheat the frying pan with the minimum amount of oil. Spread a tablespoon of liver test, forming a pancake.
Fry each side for 2-3 minutes. The liver is quickly cooked, and the ground is even faster, so it is important not to overload the fritters, otherwise they will turn out to be dry.
Delicate, juicy, fragrant liverworts from beef liver immediately serve to the table with your favorite side dish, salad. You can also serve with a crispy toast and greens.
They are very tasty, tender and soft. My kids adore them – I always cook a double portion.
