This marble cake is one of my favorites. Very simple in cooking and has an unusual taste, an interesting appearance, attracts the eye. Its author is the famous French chef Paul Bocuse.
To make a cupcake, you need to determine the proportions and you must apply the scales. The first thing to do is weigh the eggs in the shell, and then take the same weight for the rest of the products, except for chocolate.
4 eggs from my refrigerator weighed 250 g, which means that flour, sugar, oil should also be taken for 250 grams. If the weight of eggs is less or more, then the remaining ingredients decrease or increase accordingly.
To prepare a marble cake from Paul Bocuse we take all the products listed.
For faster egg whipping, sugar powder is taken, but I have ordinary sugar. Beat eggs with sugar and a pinch of salt and white until a lush mass. This takes at least 5 minutes.
Sift all flour with vanillin.
Mix with a hand-wound whisk until a smooth, homogeneous dough is obtained.
Then add soft butter.
Melt the chocolate in an acceptable way. I do this in a microwave for a minute, and then stir until completely homogeneous and smooth.
Add the chocolate to the dough.
Intervene it with a couple of movements, no more, to get a “marble” dough.
Put the dough into a baking dish. Form and parchment I do not grease. Bake the cake in a preheated 180 degree oven for about an hour. For strong toasting, cover with foil or place foil under the bottom of the mold.
Ready to check the cupcake, it should go completely dry.
Cupcake to cool in the form, and then remove it.
The marble cake from Paul Bocuse is ready. It turns out very loose without a baking powder and at the same time dense, it simply melts in the mouth.
