Blueberries are a wonderful berry, which grows more often in the North. She even enters the cosmonauts’ menu. The curative properties of blueberries have long been known. With her prepare various pies and desserts, muffins and rolls, cakes and buns.
Sand cake with blueberries is one of the most loved in our family. Especially for its preparation, we collect about two buckets of a unique northern berry – blueberries – in our taiga forest. Then we freeze it and enjoy the whole year round with a pie from a delicate short-dough, juicy berries and vanilla-sour cream filling.
To make a shortcake from a short dough with blueberries, I prepare the products on the list.
First I knead the dough. In a bowl, sift flour, add yolks, plain and vanilla sugar (I use with natural vanilla), salt, sour cream, butter at room temperature.
I mix the short pastry, put it in a bag and put it in the cold for 30 minutes.
A round, detachable shape with a diameter of 22-24 cm is lubricated with vegetable oil, I spread it out in a circle, forming a bottom and a rim. On the edge of the dough I make the defenses.
With the help of a fork, I make punctures on the bottom of the base.
Then I bake the base in a preheated oven to 200 degrees for about 18 minutes. To prevent the dough from swelling, it is better to cover it before baking parchment and pour on it beans. I take out the form with the dough from the oven.
While the dough is baked, I prepare the sour cream filling. In a bowl I combine sour cream, eggs, proteins, plain and vanilla sugar, starch.
I beat the fill with a mixer or whisk.
In the baked basis I spread blueberries.
I sprinkle berries with sugar.
I fill them with sour mixture.
I bake a cake in the oven at 200 degrees for about 28-30 minutes.

Butter – 120 g
Wheat Flour – 250 g
Yolk egg – 2 pcs.
Sugar – 4 tbsp.
Sour cream – 1 tbsp.
Salt – 1 pinch
Vanilla sugar – 1 tsp.
Fill:
Sour cream – 180 g
Egg of chicken – 2 pcs.
Egg white – 2 pcs.
Sugar – 2 tbsp.
Vanilla sugar – 1 tsp.
Potato starch – 2 tbsp.
Filling:
Blueberries (fresh or frozen) – 1.5 cups
Sugar – 3-4 tablespoons.
Additionally:
Vegetable oil – 1 tsp.
Glass – 240 ml
