Frankly, the filling with salty cottage cheese is prepared for the first time, since in the edge of my childhood it was not at all customary to mix cottage cheese with salt, but more and more cottage cheese was mixed with sugar. But it is always interesting to try a new taste. As for me, the salt loses sugar unambiguously.

To prepare salted dumplings with cottage cheese we will need the following products.
Mix the water with the egg and salt. Lightly beat everything with a fork until unified.
Pieces add flour until the moment when you can knead the dough. Flour can be different, so its quantity is approximate. Knead the dough on the table until it stops sticking to the hands, but remains soft. Cover it with a towel and leave for a few minutes to walk.

Combine the cottage cheese with chopped greens, salt, pepper, mix well until smooth. And again, at this stage you can sprinkle cottage cheese with your favorite spices, the smell of which is pleasant to you.
For convenience, the dough is divided into two parts. One leave under the towel, and from the second make a tourniquet and cut into the same pieces.
Each piece is flattened, and then rolled into a flat cake. I like this method much more than when the whole dough is rolled out and cut out with a glass. I get it faster and without waste. On the middle of the flat cake to lay out the filling and fill it with a dumpling.
If you do not need to boil all vareniki immediately, then they are frozen on a tray in the freezer, and after freezing they are added to the bag and stored there until needed.
