I remember how my mum cooked dumplings for a couple, these are vareniki from childhood – lush, plump, with sweet cottage cheese. This kind of stuffing is loved in our family.
Today I’ll try to cook vareniki on kefir for a couple of old ways, without a steamer and special appliances. And I need to cook a couple of ordinary gauze for a couple.
To knead the dough for steamed dumplings, let’s take simple products.
In a bowl, pour kefir, add sugar, salt, soda and stir to go reaction.
Add the egg and stir again.
Pour 2 cups of sifted flour with baking powder (soda) and knead the soft dough. Leave some flour on the pile, just under half a glass.
To knead the dough on the table, pour a little flour, so that it falls away from the hands, but it remains soft and supple. This is important, otherwise vareniki will not rise during cooking. Cover the dough with a towel and prepare the filling.
Vareniki can be prepared with any filling – berry, curd, cabbage, etc. I have potato. To do this, boil the potatoes and mix it with fried in oil onions, salt and pepper to taste.
Separate from the dough a small piece, roll it into a bundle and cut into equal parts. Dough to roll out is not necessary – if it is mixed correctly, it should turn out to be very soft. It is enough to flatten each piece by hand, dipping into flour, so that it does not stick. The thickness of the flat cake is not less than 2-3 mm.
Potato stuffing put in the center of each cake and zalipit dumpling.
Vareniki can be naplep for future use and freeze, and then boil as needed. Or cook all at once.
For steam cooking, we construct such a design: you need to take a pan with a wide top, pour into it one third of the water and pull the edge of the gauze so that it slackens slightly, without touching the water, and held tight. Cover the pan with a lid and bring the water to a boil. When the water boils, the gauze becomes damp, this is normal.
Dilute dumplings on gauze so that when covered with a lid, they do not touch it. Cook the vareniki on kefir for a couple with constant boiling water for about 10 minutes without opening the lid. The cooking time depends on the size of the dumplings. You can get one varenik and cut it, checking if the dough is ready.
Vareniki should increase in size and become lush. After removing one batch, immediately cook the next.
On the table, cooked steamed dumplings on kefir immediately! Hot!
Vareniki on steamed kefir
Lush vareniki for a couple can be cooked with any filling to your taste.
