In a cup or small bowl, mix cocoa, sugar, a pinch of salt and ground cinnamon. A pinch of salt added to the mixture will enhance the “chocolate” taste of cocoa, and the cinnamon will make the flavor of the drink a little brighter.

Pour 100-150 ml of boiling water and mix everything thoroughly until the cocoa and sugar dissolve, and get a glossy homogeneous mixture. This stage will allow to completely dissolve the cocoa beforehand and avoid the appearance of unappetizing lumps in the finished drink.

Pour hot water into the cocoa

On medium heat, heat the pasteurized milk, not allowing it to boil (up to about 90-95 degrees). Not allowing the milk to boil, we warn the appearance of milky foam on its surface. Before adding milk, rinse the pan or sauté pan with cold water – so the milk will not burn.

Boil the milk

As soon as the milk begins to boil, reduce the heat, and constantly stirring the milk with a whisk, in a thin trickle pour in a mixture of cocoa and sugar.

On medium heat, bring the mixture back to the boil, and then, reducing the heat to a minimum, cook for another 2-3 minutes, stirring occasionally, not letting the drink boil.

Then turn off the heat and beat the mixture with a whisk for 1-2 minutes. This stage will create a layer of air bubbles on the surface of cocoa, which will also prevent the appearance of a milky film.

Pour the hot drink over the cups.

Add a handful of marshmallow (or chewing marshmallow, cut into small pieces) into each cup of the drink. Wait a few seconds for the marshmallow to melt away from the heat emanating from the hot cocoa, and then serve the drink to the table.
