Rabbit meat is considered to be a low-fat and dietary product, and a dish cooked in foil in the oven turns out to be especially delicate.
Ingredients
Rabbit (carcass) – 1 pc.
Onion – 2 pcs.
Carrots – 1 pc.
Garlic – 4 denticles
Celery – 1 stem
Lemon juice – 2 tablespoons.
Vegetable oil – 3 tbsp.
Drinking water – 2 tbsp.
Salt – to taste
Black pepper – to taste
Potatoes – optional
Cooking process
In this recipe I propose two options for cooking a rabbit. The first option is actually a rabbit in foil, and the second option is a full dish: a rabbit with potatoes baked in foil.
Bake a rabbit in foil in the oven can be entirely, but for convenience I divided the carcass immediately into portions.
To make the rabbit’s meat more flavorful, I suggest meat first pickle. To do this, put 4 garlic cloves, one onion (brushed and cut into pieces) into the blender bowl, lemon juice, 2 tbsp. vegetable oil, as much drinking water, salt and pepper to taste.
All grind to the state of gruel. The resultant marinade is coated with meat, covered with a film and left for 2 hours in the refrigerator.
For the first variant of cooking baked in a foil in a rabbit oven, the form is covered with foil (we take a foil with a reserve), put 1/2 carrot, 1/2 onion and a stalk of celery cut into large pieces, add a little vegetable oil (1/2 st) .l.). On the pillow of vegetables, we lay out pieces of rabbit and wrap everything in foil. At the bottom of the form (under the foil) pour a little water. Thus, the meat, baked, soaked in taste and aroma from the vegetable pillow.
For the second variant, the bottom of the baking dish is lubricated with 1/2 tbsp. vegetable oil, lay the peeled raw potatoes, cut into halves, then finely chopped carrots and onions (1/2 pcs.). Vegetables seasoned to taste, on top we spread the pieces of rabbit and the form is tightened with foil. In this version, the meat, baking, will permeate the potatoes with juices. It will be very tasty!
Both versions of the dish are baked in a preheated oven (the temperature is 205-215 degrees) for about 1.5 hours or until ready.
We serve the dish in a hot form, sprinkling with your favorite greens.
