Of course, we are all used to making jam from fresh berries in the season of their ripening. But not always there is time to engage in procurement, much easier and faster to freeze berries. However, I ask you to spend a little time preparing the berries for freezing, and then in the winter you will not have to defrost and sort them out. After collecting, pick berries, rinse and dry, and then already send to the freezer. If you have purchased frozen berries in the store, you can not avoid the defrosting and quick washing period. I took care to prepare the berries in the summer, so I will prepare a jam of frozen black currant without defrosting the currant.

For cooking jam, I always take berries and sugar in the ratio of “volume per volume”, except for very sweet or very acidic berries or fruits. This time in the ingredients I indicated the weight, but I took just the same bowls, it’s very convenient.

Within 5 minutes, gently, but intensely, stir the sugar until completely dissolved, without putting more pot on the fire. This simple technique will allow you to get thick jam. Leave the jam to cool slightly. That’s all, you can pour the tea and treat yourself with jam from the frozen black currant! Fresh, tender, very fragrant – in the winter such jam is especially tasty!
