You can make the filling only from the liver and onions, or you can add mashed potatoes to the liver, so it will be delicious too.
Today my recipe for the filling will be only from chicken liver and fried onions. There are also several options for making such a filling, you can fry the liver, and then scroll in a meat grinder or grind with a blender, and you can first boil it, and then mix it with a large amount of fried onions and chop. The second option is more to my liking, it seems more useful to me, I’m offering it to you today. So, we will prepare all the products for the preparation of the filling from the liver for pies and pies.
As I said above, I cook the liver for the filling. Therefore, we thoroughly wash the liver under running water, put it in a pan and fill it with cold water. We put the saucepan on the stove and boil it for 30 minutes after boiling. Be sure to remove foam after boiling.
While the liver is boiled, cut the onions for roasting. Luke should take at least 2 large onions, this will only benefit the filling, it will be juicier and tastier.
Fry onions in vegetable oil on a small fire at first to transparency, and then to light golden. Do not overcook onions. Another little secret – add a pinch of sugar in the process of frying onions, it, and then the filling with it, will taste better.
With the fried liver, drain the water and let it cool down a little.
Now we need to mix and crush everything. You can do this with a mincer or with a blender, choose the method that you like best. In the process of grinding, add salt and ground pepper to taste.
I did it in a blender in two sets, since the whole mass did not fit right away.
We try to taste, if necessary – add salt and pepper. The filling of the liver for pies and pies is ready.
From the yeast dough prepared beforehand, we form the billets for pies, lay out the filling, tear the edges and bake.
