Seasonal recipe of tasty home-made mushroom eggs from mushrooms and tomatoes with onion, garlic and butter.

Mushroom caviar with tomatoes is a universal snack, it can be served with meat, or with a side dish, even simply put on a piece of bread, and sprinkle with fresh herbs on top. Also, caviar from mushrooms with tomatoes harvested for future use – rolled into cans. In any case, you get a delicious and original treat, which is very quickly and easily prepared.
Prepare the ingredients we need: ripe tomatoes, fresh mushrooms, onions, frying oil, salt and several kinds of pepper, garlic.
Fresh mushrooms need to be thoroughly washed, cut off the legs. I take champignons, but of course you can use forest mushrooms.
Mushrooms need to be cut very finely. To do this, you need a sharp knife and sleight of hand, but you can use the services of a food processor or a blender. In this case, the cutting will be smaller.
Preheat the frying pan until oil is available. Pour the chopped mushrooms and fry them, stirring. At once mushrooms will allocate a liquid, and will be slowly roasting in it, not burning. We make slow fire.
We clean the bulb of medium size, cut into small cubes. To evaporation from the onions do not pinch your eyes – you must constantly wet the knife with cold water.
Now pour the chopped onion to the fried mushrooms, and mix the spatula. We continue to fry on low heat. We make sure that there is enough liquid in the frying pan, as soon as it evaporates – add 2 tablespoons of refined oil.
Fresh tomatoes and cut into quarters, and then each cut along 6-7 parts.
Put the tomatoes in a frying pan to mushrooms and onions. Tomato juice is also poured into a frying pan, everything is mixed and stewed for another 10 minutes.
After 5 minutes, add to the vegetables crushed garlic, salt, black and red ground peppers. Stir the last time, and finish the preparation of mushroom roe with tomatoes under a tightly closed lid.
You can slightly cool the caviar and immediately serve, but it is also tasty in cold form.
