The recipe for a very tasty cake with a tomato and cheese cake.
Squash – 1 kg
Chicken eggs – 5 pcs.

Cake from zucchini – appetizing and easy in cooking dish. A great example of what you can decorate and diversify the everyday menu with the same standard set of products that we use every day. And most importantly, to do this easily, having spent a minimum of time and effort.
In fact, our cake – all the same zucchini pancakes. However, decorated with a spicy “cream” based on sour cream or mayonnaise. Chopped with grated cheese, supplemented with a variety of fillings, they appear in a completely new, very attractive and appetizing form.
I’ll prepare a version of a zucchini cake with a light vegetable filling and cream based on sour cream, but using this recipe as a guide, you can cook completely different versions of this dish each time.
“Korzhi” from zucchini have a neutral and very delicate taste, which allows you to experiment boldly with components of both “cream” and fillings. From vegetables and meat to ham, caviar, squid and fish pieces – everything that you like, and what’s in the fridge. Shall we proceed?
Prepare the ingredients in the list:
- zucchini, chicken eggs, flour – to prepare the cakes of the future zucchini cake
- Tomatoes, cheese and green onions – for filling
- sour cream, garlic, a little salt and ground black pepper – for “cream”
Zucchini grate on grater and squeeze out excess juice.
Add 5 eggs, a little salt, ground black pepper and mix well.
Add the flour. I add about 10-12 table spoons with a hill of flour. Mix the ingredients thoroughly. The dough should turn out thick, as for the preparation of pancakes.
Preheat the frying pan. Grease with vegetable oil and, having laid out a portion of the dough, level it with a spoon on the bottom of the pan, making a pancake shape.
These lush pancakes and become the cakes of our cake from courgettes. Fry the cakes for a few minutes on both sides, until golden brown.
While the cakes are fried, you can prepare a “cream” for our cake. To do this, mix sour cream, a few chopped garlic cloves. Add salt, ground black pepper to taste. You can additionally add fresh greens, use cream cheese cream, mayonnaise or a combination of sour cream and mayonnaise instead of sour cream.
Prepare the filling for the cake. I sliced tomatoes and green onions, rubbed cheese.
When the cakes are ready, they must be cooled before proceeding to assemble the cake. In a frying pan with a diameter of 22 centimeters, I get 7-8 cakes.

Decorate the squash cake at will. I was in a hurry all morning, and, probably, therefore, the theme of the watch arose.
The zucchini cake is ready. It is desirable to cool it and allow it to stand in the refrigerator for several hours before serving. But to be honest, we always miss this stage and go to the most delicious – to tasting.
