Cooking process
Paste from the duck liver we love very much, so I cook it often enough. It is prepared literally in a matter of minutes, and the next day you will have a wonderful breakfast or snack, a real delicacy.
To prepare the paste from the duck liver at home, prepare the foods on the list. Liver wash under running water, dry with paper towels, remove excess fat and film. Peel onions, wash.
Preheat the vegetable oil in a frying pan, dissolve the creamy oil in it. Cut the onion into small cubes, fry it in oil until golden.
When the onion becomes clear, add the liver. Cooking it should be literally one minute from both sides.
As soon as the liver changes color, add wine. Cook 3-4 minutes, the wine will boil slightly. Add all the seasonings and salt to taste.
Last pour the cream. As soon as the cream boils, turn off the gas and allow the liver to cool slightly.
Transfer the contents of the frying pan into a blender and pour everything until smooth.
Spread the pate on molds, let it cool completely.
In a deep pial, melt the butter.
Carefully remove all foam from the oil surface.
Similarly, gently scoop the oil and pour the pate, try not to hook the serum from the bottom of the pial. Put the pate in the fridge, the butter will harden and form a crust on the surface of the paste, this will not only keep the pate longer, but will give it a completely different taste and color.
Ready pate served with croutons or simply with a fresh bread. As you can see, the next day prepared at home pate from the duck liver was ripe under an oil crust and became a pinkish color.

A simple recipe for cooking homemade pate of a duck liver.

Liver duck – 500 g
Onion – 1 pc.
Garlic – 1 tooth
Semi-sweet wine – 100 g
Cream 20% – 100 g
Butter – 120 g
Olive oil – 2 tbsp.
Ground coriander – 0,5 tsp.
Nutmeg – pinch
Salt – to taste
Pepper – taste
