The dough gets two classes: both rest and brewing, and the sort of flour does not play a special role, it is possible to create such pancakes as on wheat flour of the highest grade, and on buckwheat, rice, etc.
So, prepare the necessary ingredients and start cooking!
Eggs break into a deep plate or bowl, put dry spices: sugar and salt. We’ll blow it with a whisk or a fork.
We pour kefir of any fat content, once again carefully stir everything.
We will add wheat flour of the first grade, previously sifted, we will pour off a little oil to lubricate the frying pan and add its residue to the dough. We mix everything into the mass with smooth movements, trying not to form lumps.
Leave the dough in this form for 15-20 minutes for rest. After the specified time we pour boiling water into it – a lot of boiling water will not be needed, we only need bubbles on the surface. Instantly stir the boiling water into the dough.
Lubricate the frying pan with oil and heat it on the stove. Pour a little pancake batter and shape a pancake in a circular movement of the pan. Fry for a minute and turn it over as soon as the edge of the pancake is dry.
Fry another minute. In the same way, prepare the rest of ruddy openwork pancakes on kefir (with holes).
We will lay out pancakes on a wide plate for serving and call our relatives or friends to the table.
