On medium heat, stirring constantly with a whisk, cook the mixture until it starts to thicken.

As soon as this happens – reduce the heat, and stirring, continue to cook the cream for 5-7 minutes, until it finally thickens. The readiness of the cream is noticeable visually – the corolla will leave a distinct trace on the surface of the cream. If you dip a spoon in a cream – it will envelop it with a thick layer. If you hold the cream on the spoon with your fingertip, there will be a clear trace.

When the cream thickens, reduce the heat to the lowest level, and stirring, boil for another 1-2 minutes – so you will probably get a very thick cream that will not spread out when assembling the dessert and will keep clear, visible layers in it, which is especially important , if you plan to serve dessert in a transparent serving bowl or glasses.

Cover the cream with a food film so that it fits snugly against the surface of the cream. Cool the cream to room temperature, and then place for final cooling in the refrigerator for at least 2-3 hours (I prepare the cream in advance and leave for the night).

In advance, brew a cup of strong coffee and completely cool it. When the cream and coffee are cooled, you can start assembling the dessert.
