Muffins are small portioned cupcakes, in which fruit, chocolate, nuts or berries are often added.
Cupcakes and muffins are absolutely different desserts, although they look similar. But muffins are baked only in small molds, and muffins – both in small and large: round or rectangular.
But still the main difference between muffins and cupcakes is the method of kneading the dough. To make dough for muffins, it is necessary to mix separately dry and liquid ingredients, then combine them and quickly mix with a spoon.
To prepare muffins with black currant you do not need much time and effort, and a set of products for this wonderful baking is quite affordable.
Shall we proceed?
Prepare the ingredients.
In the first container, dry ingredients must be connected. Flour with baking powder, we sift, add sugar and salt, mix thoroughly.
In the second container we connect liquid ingredients: vegetable oil, egg, milk, food flavor. Add the lemon peel and mix it with a handful of whisk or spoon until the ingredients are combined. Do not need to shake!
We connect the liquid ingredients with the dry ones. For this, a liquid component is poured into a container with dry ingredients.
Mix with a spoon from the bottom-up only to moisten the dry ingredients. The dough will turn out slightly cloddy. Do not be diligent, do not try to mix the dough to smoothness.
Add the currant (I have frozen).
Gently mix. Alternatively, the currant can be rolled in flour and then added to the dough.
We spread the dough on paper capsules or silicone molds, filling them with 2/3 of the volume. If desired, the top of the muffins can be sprinkled with brown large-grained brown sugar.
Billets with muffins put in a preheated to 205-210 degrees oven. Bake 15-25 minutes until golden brown and dry skewers (look at your oven). At me muffins with a black currant were baked 23 minutes at temperature of 210 degrees.
We give the ready muffins a little cool in the molds, then put them on the grate for further cooling.
Delicate fragrant muffins with currants are ready.

Wheat flour in / s – 250 g
Sugar – 200 g
Baking Powder – 8 g
Salt – 1/3 tsp.
