Cold beetroot on kefir from boiled beets, with fresh cucumbers. An excellent dish for a hot day!

Ingredients

Beet boiled – 1 pc.

Eggs boiled – 3 pcs.

Cucumbers – 3 pcs.

Parsley – 0.5 beam

Dill – 0,5 tufts

Green onions – 3 pcs.

Kefir – 1 liter

Salt sea – to taste

Pepper – taste

Lemon juice – to taste

Cooking process

In summer, you want light and cold food, preferably also low-calorie. Imagine my surprise when I found my favorite beet soup on yogurt from Ducane. The soup is very light, but at the same time it satisfies hunger well.

To make a cold cresol on kefir, take the food on the list. Cucumbers and greens need to be washed, dried. Beetroot (large) and clean eggs. With cucumber peel off.

Recipe for cold beetroot on kefir

Chop the green onion, grate cucumbers on a large grater.

Grind onion and cucumber

Add chopped greens – parsley and dill.

Pour in chopped parsley and dill

Then add grated eggs and beets on a large grater.

Pour the soup with kefir, squeeze out lemon juice, salt, pepper to taste. If the soup is thick, pour a little water.

Before serving, the soup should be in the refrigerator, serve cold beetroot on kefir with a slice of lemon. If you want, you can add a couple of ice cubes to the beetroot.
