To prepare tomato juice through a meat grinder for the winter, you need only homemade tomatoes grown in an open bed, and not in a greenhouse, and all the more not bought in a supermarket. Small fleshy red round tomatoes will suit perfectly for juice. It will also require salt and very little acetic acid.
Rinse the tomatoes well with cold water.
Slice it convenient for twisting in a meat grinder pieces.
Together with the usual meat grinder, I will use a special nozzle for juice, so I did not remove the skin and the place from the peduncles. I will get tomato juice with pulp without seeds. There is an option of cooking tomato juice through a meat grinder with seeds – when an extended nozzle for juice is not used, and then tomatoes without skins and middles are skipped in the usual way.
Pass tomato juice through a meat grinder into an enamel saucepan. Cook for 15 minutes, taking off the foam.
Add salt to your taste. If tomatoes have a little sour, then you can add sugar. I cook tomato juice only with salt. Stir well. The salt must dissolve. Cook the juice for another 5 minutes.
Add acetic acid based on 3 liters of juice 1 tsp. acid. Cook the tomato juice for another 1 minute.
To store tomato juice prepared for the winter through a meat grinder is best in glass containers under screw covers.
Pre-boil the jars above the steam, and the lids – in a saucepan. Banks can also be baked in the oven.
Pour the hot tomato juice into the jars.
Close the screw caps. Wrap in warm cloth until completely cooled. Procurement of tomato juice in the meat grinder for the winter is over!
Transfer the jars to the storage cell. In winter, such a vegetable drink will go on hurray.
