A very interesting variant of harvesting fish for the winter is a salad with mackerel and vegetables. In the future, it can be used in different ways, for example, quickly and simply cook a delicious fish soup, just by adding potatoes and water. As a snack, this snack is also very good – put it on the bread and immediately forget about the hunger.
To prepare a salad with mackerel for the winter, take the following ingredients.
Onions need to be cleaned and cut into small cubes or thin straws, as more like it. The mackerel should be washed, cut off the head and get the entrails, put in a saucepan with salted water, a bay leaf and peppercorns, cook for 25-30 minutes on low heat.
Fresh carrots should also be cleaned, washed and grated on a large or small grater.
Tomatoes need to be twisted in puree with the help of a combine or meat grinder. Beforehand, you can peel off the tomatoes in boiling water for 3-4 minutes.
In the saucepan add the sliced vegetables, add the tomato puree, salt, sugar, spices and vegetable oil. Stew on low heat for 15-20 minutes.
While vegetables are being stewed, get the cooked fish from the pan and cool, take the meat from the bones.
Add the fish pieces to the saucepan with vegetables and mix with a spatula. Stew another 15 minutes, at the end add the vinegar.
Put a snack of vegetables with fish in sterile jars, it is convenient to use a capacity of 500 ml. Screw or roll with sterile lids.
Remove the blanks under the blanket, and in a day, hide the salad with mackerel for the winter in a cool dark place for further storage.
Salad of mackerel is well kept until the next season of vegetables or even longer.
