If before the pies baked in the Russian oven, today, in the age of technical progress, we use an oven or a multibar for baking pies.
I bring to your attention a modern recipe for a pie with cabbage and mushrooms. We take any mushrooms: champignons or forest, fresh or frozen. It all depends on your preferences.
Before you are products for cooking yeast dough for pie.
In the flour add quick-acting yeast, mix.
In warm milk, we dissolve sugar and salt. Then combine the milk with flour.
Add the melted, but cooled to a warm state of margarine or butter, knead the dough. The dough turns out soft, slightly sticking to the hands.
Put the dough in a container, cover it with a towel and put it away in a warm place for 1.5-2 hours for lifting.
In the meantime, we will prepare the products for the filling and start cooking. I have frozen mushrooms, I defrozen them beforehand.
Chop the onions finely, grate the carrots on a grater. Spread into a frying pan with a small amount of oil, fry until soft on a small fire.
In parallel, in the second frying pan, we will fry the finely chopped cabbage until ready. Do not forget to salt and pepper.
In a frying pan with onions and carrots we add chopped mushrooms, fry until done.
Now connect the contents of the two pans. The filling is ready.
The risen dough is kneaded and divided into 2 parts: one larger and a smaller one.
For baking, I will use a shape with a diameter of 28 cm. Put a circle of parchment on the bottom of the mold.
We slightly dust the working surface with flour and roll out the greater part of the dough a bit more than the diameter of the mold. We transfer the circle from the dough to the mold, we form the skirts 5 cm high.
Evenly distribute the filling of cabbage and mushrooms.
Now roll out the rest of the dough, put it on the filling.
We bend the sides to the upper layer of the dough, we patch it. In the center of the pie, make a hole for the exit of steam. We put the cake in a preheated oven up to 180 degrees. Bake 45-60 minutes (focus on your oven).
Delicious, with a delicious golden crust pie with cabbage and mushrooms we take out of the oven. We lubricate the top of the cake with butter.
