Today I want to share with you a recipe for simple and delicious homemade kvass. Prepare a natural, light and illuminating rice kvass. In addition to the obvious component – rice, we will add a bit of raisins and burnt sugar to the kvass. Raisins will give the drink a light sparkling, and burnt sugar – an appetizing caramel color and a pleasant taste. Let’s start ?!
For cooking kvass from rice and raisins, take the food in the list.
Boil 100 grams of rice until cooked and cool to room temperature.
Add 1 tbsp. sugar, raisins and yeast.
Mix everything well, cover the food container with a film and leave it at room temperature for 1 hour.
Then place the mixture in a jar or other container suitable for cooking kvass.
Boil and cool the water to a temperature of 36-38 degrees.
In a thick-walled frying pan, on medium heat, heat 200 grams of sugar for several minutes until it melts and becomes golden in color. Then add 50 grams of raw rice and fry for a few more minutes until the mixture gets a caramel shade with orange flashes.
In order for the rice taste to be more pronounced in the drink, you can fry only 100 grams of sugar, and add the remaining sugar to the jar to the rest of the ingredients.
As soon as you feel the characteristic aroma of burnt sugar, turn off the fire and add the mixture to the jar with boiled rice, yeast and raisins.
Pour in the prepared water. Cover the neck of the jar with gauze or install a water seal and leave the kvass at room temperature, in a dark corner of the kitchen, for 5 days.
Then, strain kvass, pour into a sealed container and place in the refrigerator for another day.
Rice kvass is ready.
Ready rice kvass store in the refrigerator and serve chilled. Remember that despite the external harmlessness and delicate taste, kvass turns out to be low-alcohol and can easily turn your head.
